Here’s a recipe I tried from Martha Stewart’s site. I am not a fan of hers and refuse to buy her craft supplies, but I was desperate to find a potato salad this past Memorial Day as it is a tradition for summer holidays around my house. If you’re like me, take a little and run or you’ll stand there trying to eat the whole bowl at once. The first time I made it (without the vinegar) I hardly had room to eat anything else. I’m making this again on July 4th using the vinegar so we’ll see how that goes.
Notes: Make sure to read the ingredients on the dijon as some contain FODMAPs such as honey. I like Koop’s as it is gluten free and there’s no honey listed on the label. Also, according to Monash University white wine is safe so hopefully that goes for white wine vinegar as well.
